I was really craving chicken parm the other night. Or rather, I was craving the flavors commonly associated with chicken parm.
RECIPE: Chicken Parm Panini
Makes 2 Paninis
1 Chicken Breast
Homemade Tomato Sauce
Whole Wheat Bread
1) Slice the chicken breast thinly, as well as slicing up the mozzarella cheese.
2) On a piece of bread, drizzle balsamic vinegar, and then lay down a layer of chicken with a heavy spoonful of tomato sauce smeared on top.
3) Lay down a thin layer of fresh basil over the whole sandwich, and then all the mozzarella cheese.
4) Top with another slice of whole wheat bread and put it into the panini press. Let it cook until its toasted and the cheese is all melted.
All the fresh basil really made this sandwich come alive! I couldn’t get enough of it!
