Omelette Bagel Sandwich

Anyone else up for breakfast for dinner? My favorite in-laws mailed us bagels from our favorite bakery near them. The temptation of all those everything bagels staring at us, well we had to have some for dinner! I couldn’t decide what type of eggs to put on this sandwich, so I decided to do an omelette. If I thought ahead I should have put the cheese inside of the eggs, instead of straight on the bagel.

RECIPE: Omelette Bagel Sandwich 
Makes 2 Servings

Oven set to broil
Cutting Board
Knife
Cast iron pan
Lid or cover
Bowl

INGREDIENTS:
Everything Bagel
Butter
Pepper Jack Cheese
Eggs
Liquid from Canned Peppers
Cracked black Pepper

DIRECTIONS:
1) Slice bagels in half and let toast lightly under the broiler in the oven.
2) Thinly cut slices of pepper jack cheese.
3) When the bagels are barely toasted, place the cheese on the bottoms and butter the tops. Return to the oven until the cheese just begins to melt a little bit, like a minute or so.


4) Melt butter in the cast iron pan.
5) In a bowl, scramble however many eggs you want on each sandwich. My husband had three, and I had one.
6) Instead of adding milk, pour some of the liquid from the canned peppers into the eggs. Stir well!


7) Pour the egg mixture in the hot cast iron pan. Crack a little pepper on top and then cover.
8) Keep covered until the egg mixture fully melts.
9) Fold the omelette eggs in half and place on top of the cheese.
10) Top the sandwich with the buttered bagel half and serve! If you have any greens, like arugula or spinach, be sure to add that to this sandwich as well! dscf0902

Apple up to the Bar Burger and chips

We are having too much fun making burgers. Actually, that’s not true. We could be doing a lot crazier things then what we are currently doing. This recipe comes with homemade potato chips, mostly cause I was craving chips, and partially cause I wanted to break in our mandoline. That thing is fun! We made more apple than just went on the burger, but ate it all before dinner because yum!

RECIPE: Apple up to the Bar Burger and Chips 
Makes 2 Servings

Cast Iron Pan

Apple Corer

INGREDIENTS:
Potato (only ended up using 1)
Salt
Malt Vinegar
Hamburger Buns
Apples
Galena Street Rub
Beef
Pepper
Sage
Paprika
Crushed Red Pepper
American Cheese Slices
Avocado Oil

DIRECTIONS:
1) Form the beef into patties. My husband was feeling super lazy, so the meat wasn’t ground again or mixed with anything.
2) Fire up the grill. Heat avocado oil on medium in a cast iron pan.
3) Core the apples and then slice them. Season both sides lightly with galena street rub.
4) Season the beef patties with sage, black pepper, a pinch of salt, paprika, and crushed red pepper.
5) Grill the beef patties and the apple slices. Let the buns toast on the grill as well.


6) Use the mandoline to thinly cut up the potato. Place the pieces of potato in the hot oil. Watch them and flip them and remove before they burn! You want them to be crispy, but not charred. The line between the two is not long at all.
7) Melt the cheese slices on the burgers right before removing from the grill.
8) Serve the chips and then sprinkle with malt vinegar and a dusting of salt.

If you want more chips, you just need to slice up more potatoes. We figured a taste of chips was better than eating too many.

Bread Pudding

So you were wondering in the last recipe why you saved the scraps of bread you pulled out. Well, it was to make a nice serving of bread pudding! My husband had never had bread pudding before, which shocked me. So here is my basic recipe for an introductory bread pudding.

RECIPE: Bread Pudding
Makes 4 Servings

Baking Dish
Fork/Spoon
Oven heated to 350 degrees

INGREDIENTS:
Bread
Egg
Milk
Cinnamon
Nutmeg
Vanilla Extract

DIRECTIONS:dscf0725
1) In a baking dish, place all the ripped up bread pieces.
2) Crack an egg into the baking dish, pour in some milk, and a touch of vanilla and stir it with a fork until well mixed.
3) Season with cinnamon and nutmeg, and stir again.
4) Bake the mixture until set and the the top browned. (I forgot to time it and just waited until it smelled right).
5)Serve right away, or chill and eat cold.

My husband really enjoyed this bread pudding, and he even asked me to make more in the future.

Smoked Turkey Sandwich

This meal was a complete experiment, and I am very glad it came out as well as it did. The smoked turkey meat was a gift from a friend. This sandwich was a way to extend the delicious turkey into a very large and filling sandwiches!

RECIPE: Smoked Turkey Sandwich

INGREDIENTS:
Loaf of Bread
Diced Tomatoes
Garlic
Basil
Balsamic Vinegar
Pepper Jack Cheese
Smoked Turkey

DIRECTIONS:
1) Mince 3 garlic cloves and add to a cast iron pan.
2) Sprinkle balsamic vinegar over the garlic as it cooks.
3) Slice the loaf of bread in half and pull out the insides. Set the chunks aside in another bowl for later.

5) Slice the pepper jack cheese, and let it melt into the bowled out part of the bread.
6) Add the diced tomatoes to the garlic, and season with basil.
7) Dice the turkey and stir it into the tomatoes. Let the mixture heat up.
8) Spoon the mixture over the melted cheese in the sandwich and top with another slice of bread.
9) Cut the sandwiches into the desired length and serve.

Cheerio Smore Treats

When I think of bake sales, I always think of rice crispy treats. But I almost never have rice crispy cereal in the house. In fact, all we had was cheerios. They are a good way to start your day and to lower cholesterol, so why wouldn’t we have them around? Instead of eating these by the bowl full, I decided to make Cheerio Smore Treats.

RECIPE: Cheerio Smore Treats 
Makes 8 Servings

Large Measuring Cup

INGREDIENTS:
Marshmallow
Vanilla
Butter
Peanut Butter
Cheerios
3 Graham Crackers
4-5 Hershey Kisses

DIRECTIONS:
1) In a large measuring cup or microwavable bowl, add 3-4 handfuls of marshmallows, a big scoop of peanut butter, a little scoop of butter, and a splash of vanilla.
2) Microwave the mixture until it all melts together but does not brown or over cook at all.
3) Stir it all together, pour in some cereal.

dscf06784) Break apart graham crackers and chop Hershey kisses, and drop them into the cereal.
5) Stir it all together until its one combined sticky mess.
6) In a pie pan lined with wax paper, press the mixture into it.
7) Chill for 10-15 minutes before slicing if you want to eat right away, other wise you can cover and let them rest at room temperature.

Taco Salad

I decided to have a little fun and make some taco salads for lunch. These were a fun variation on our usual nachos or burritos. The lime juice really added a nice kick to the dish, and I highly recommend that you don’t skip that step.

RECIPE: Taco Salad
Makes 2 Servings

Tortilla Chips
Lettuce
Pepper Jack Cheese
Salsa
Beans and Rice
Lime
Hot Peppers

1) Chop the iceberg lettuce and split it between too bowls.
2) Thinly slice some pepper jack cheese and top the lettuce with the cheese, hot peppers, and salsa.
3) Heat the beans and rice. Add a 1/4 to 1/2 cup on top of each salad.
4) Slice and squeeze lime over both salads.
5) Line the edge of the bowl with tortilla chips and then serve.

Husband’s Garbage Fries

So my husband and I were talking about the foods we enjoy specializing in. We make some damn fine burgers, and grilled pizza. So it is time we step up our garbage fry game. My husband surprised me with this dinner when I got home after a late night of work. He even took pictures so I could post it. He is the best husband ever.

RECIPE: Husband’s Garbage Fries 
Makes 2-4 Servings

INGREDIENTS:
Potato
8 oz Beef
American Cheese
Hot Pepper Juice
Celery
Spice Mix

DIRECTIONS:
1) Slice potatoes into thick cut fries. Place on a baking sheet, season with spice mix, and bake in an oven until done.
2) Begin cooking beef in the pan. Pour in pepper juice to season the beef.
3) Chop up the celery and add it to the beef.
4) Move the fries to a serving platter.
5) Tear up the cheese and layer it over the fries. Pour the beef and celery mixture over everything. Add hot peppers to the top.

Hamburger Helper

I love when leftover ingredients make a new meal super easy. The mushroom gravy from the potato patty recipe is perfect for making a hamburger helper like dinner. With beef, gravy, noodles, and cheese, this dinner was simply delicious.

Mushroom Gravy
Egg Noodles
8 oz Beef
Parmesan Cheese

1) Brown beef in a cast iron pan.
2) In a pot, cook the egg noodles as directed.
3) Pour the gravy into the beef.
4) When the noodles are done, drain them and stir them into the beef and gravy.
5) Sprinkle with Parmesan, and stir it all together.

Potato Patties with Mushroom Gravy

This recipe is usually one that uses leftover mash potatoes. The problem is my house never has leftover mashed potatoes. If there are leftovers, my loving husband makes sure they are out of the fridge in less than 24 hours. I guess you could say they are one of his favorite foods. The leftovers from this dinner made an excellent breakfast the next day.

RECIPE: Potato Patties with Mushroom Gravy 
Makes 4-6 Servings

INGREDIENTS:
Potatoes
Dilly Beans
Onion
Eggs
Milk
Whole Wheat Flour
Worcester Sauce
Lettuce
Carrots
Butter

DIRECTIONS:
1) Cut up an onion and mushroom, begin cooking them low and slow with butter.
2) In a pot begin boiling water. Dice up the potatoes and add them to the water.


3) Chop the dilly beans. When the potatoes are a few minutes or so from being down, drop in the dilly beans. They will add a bit of flavor to the potatoes and warm themselves up.
dscf07424) Add some milk to the cooked onions and mushrooms. Flavor with a bit of Worcester sauce and any herbs you have on hand.
5) Mash the potatoes. Stir in the eggs and handfuls of whole wheat flour until a nice somewhat stiff mixture is made.
6)  In a cast iron pan, heat up a bit of oil. Form the potato mixture into patties and drop into the oil.

Continue stirring the mushrooms until a nice gravy is formed.
8) When the potato patties are browned on one side, flip and cook the other side.
9) Cut wedges of lettuce and carrot coins for a small side salad.
10) Serve the patties right out of the skillet with a nice ladle of gravy on top.

If you have leftover gravy, it can be very useful in other dishes as well.

Mushroom Omelettes

So I apologize for not having a final photo for this recipe. When you are making omelettes, it is better to not let them get cold before eating…plus the entire kitchen smelled wonderful and I couldn’t resist digging in! It does deserve a better cheese, but I am mostly trying to use up those american cheese slices.

RECIPE: Mushroom Omelettes 
Makes 2 Omelettes

Eggs
Milk
Mushrooms
Onion
Tarragon
Butter
Pepper
American Cheese

DIRECTIONS:
1) Dice an onion and begin cooking it in a bit of butter in your pan.
2) Slice the mushrooms and add them to the softened onions.
3) In a bowl, crack the eggs and add a dash of milk. Use a fork to whip it into a nice cohesive mixture. Season with a little bit of pepper.
4) Season the mushroom and onions with a bit of tarragon.


5) Move the mushroom mixture out of the pan, pour the eggs in and cover if possible. Let it cook without being disturbed.
6) Add the mushroom mixture over half the cooked egg mixture. Add the cheese and then fold it over. Let it cooked cover for a little bit longer to get the cheese melted, and then serve. dscf0681
