We have my folks visiting so here is a quick post recipe for everyone. We had a wonderful grilled dinner and to go with it my mom made our family summer cucumber salad. Here is our recipe for the best side salad you can have at a barbecue that doesn’t contain pasta or potatoes. You can serve it at room temperature or chilled. I prefer chilled if you have the time for it. The leftover dressing can be used with other vegetables or salads throughout the week.
RECIPE: Summer Cucumber Salad
Makes Many Servings
SUPPLIES NEEDED:
Knife
Cutting Board
Bowls
Spoon
INGREDIENTS:
2 Cucumbers
1 Onion
Apple Cider Vinegar
Celery Seed
Sour Cream
1 Tablespoon Sugar
DIRECTIONS:
1) Slice cucumbers and onions into coins or rings. Place in large mixing bowl.
2) In a second bowl, mix together sour cream, 1 tablespoon sugar, a splash of apple cider vinegar, and a dash of celery seed.
3) Pour in just enough of the dressing mixture to coat the whole bowl of cucumbers and onions.
