Kick it up a Notch: Leftover Chicken Stir Fry

I love fried chicken. However, I made way too much. There are only so many meals of fried chicken I can eat before I get sick of it and feel sick. I don’t know about you, but after a certain point, I just start to crave vegetables. I don’t care if they are green, yellow, or red as long as they are fresh and not fried.

This recipe meets my two needs, using up leftover fried chicken and feeding me all the vegetables. I hope you enjoy this episode of kick it up a notch with leftover chicken stir fry.

RECIPE: Leftover Chicken Stir Fry
Makes 2 Servings 

Cast Iron Pan

3 strips leftover fried chicken
Green Pepper
Hot Pepper Flakes
Soy Sauce
Rice Wine Vinegar
Sesame Seeds

Chop all the veggies. Toss them into a heated cast iron pan in the following order: Garlic, Green Pepper, Scallions, Broccoli.
2) Season with parsley, 2 t ginger, 2 t hot pepper flakes, 1 T rice wine vinegar, and 1 T soy sauce. Add a 1/4 cup of water to help the dry seasoning coat the vegetables evenly.
3) Add chicken and stir until it all is evenly heated and flavored.
4) Serve in a bowl topped with sprinkle of sesame seeds. You can add sriracha if you  want an extra kick.



The end result definitely did not taste like fried chicken. This recipe is a complete transformation of the original leftover into a new fresh meal.  Hopefully it inspires you to try something new in your kitchen with leftovers.
